HOKKAIDO RAMEN SANTOUKAHokkaido Ramen Santouka, a Japanese Noodle Restaurant, is celebrating its one-year anniversary in Bellevue. To reward its faithful customers,the world renowned restaurant will offer a 10 percent discount during the month of June.

CEO Jun Yoneda says the company gained new customer insights from diner feedback during that time. “What we learned in our first year is that customers were eager for vegetarian-friendly ramen”, says Yoneda, “We are excited to provide soy milk and miso-based ramen for those that prefer a meatless option.”

The restaurant has been developing new dishes that fit its successful tradition and yet deliver new flavors that strike a chord with its loyal fan base. Santouka’s signature dish features bright red, pickled plum. A Seattle Times review noted the dish that packs, both a satisfying crunch, as well as a tangy taste.

While ramen has been around for hundreds of years in Japan and other Asian cuisines, it has been only in the last two years that ramen trends have have become something to pay attention to in the United States.

Santouka’s new ramen offerings include:

Vegetarian Ramen made with soy and miso, topped with fresh scallion, bamboo shoots, mushroom and plum.

Mazemen Ramen, a dry ramen dish loosely translated to “mixing noodles,” is made with braised pork, fresh scallion, bamboo shoots and mushroom, available to-go.

Goma Miso Ramen, sesame ramen, topped with fresh baby arugula, bamboo shoots and mushroom.

  1. I live like a block away from here, but my girlfriend still makes us go to Kukai, because Santouka doesn’t have a chicken ramen. She doesn’t eat pork. Maybe I can convinced her to try the veggie ramen.
