The owner of 0/8 Seafood Grill and Twisted Cork Wine Bar, Chef Dan Thiessen, has plans to open a new restaurant concept at Bellevue Place in Downtown Bellevue: Stir Martini & Raw Bar.

The new concept is anticipated to open in July 2009, alongside the opening of the Bellevue Place Hyatt Regency Expansion. The 4,400 square-ft. space will take up part of where RAG Mens Style currently occupies, as RAG will close their doors to business within the next 2 months. The restaurant will be on the first floor and allow for outdoor patio seating.

The restaurant’s interior will be done by Seattle’s Dynamik Space and will have the look and feel of a modern Pacific Northwest lodge.

Both 0/8 Seafood Grill and Twisted Cork Wine Bar, and Stir Martini & Raw Bar, will be under the newly formed “Chef Dan Restaurants,” a newly created management group.

  1. Not surprised RAG is closing. It’s a terrible location.

  2. I dunno, the Panera Bread is two blocks further out and that place manages to be busy all the time. I just don’t think there’s a big enough market for what RAG is trying to do. I’m a relatively high level exec at my company, I don’t think I’ve ever seen anyone wear a suit to a meeting except for external vendors trying to impress us. Seattle is just more laid back in terms of menswear.

  3. Yup, RAG closing has nothing to do with location. It has to do with selling a product so few people need, or want.

    Even though plenty of people in this area can afford what their selling there are just to few people who place value on dressing in high style (men anyway).

  4. RAG’s concept could have been a great thing and got great feed back. It’s too bad, another victim of the economy.
