The anticipation is over. Din Tai Fung is now open at Lincoln Square in Downtown Bellevue.
The award-winning dumpling family style restaurants is located on Lincoln Square’s 2nd floor near the sky bridge that connects Lincoln Square to Bellevue Place.
Although the chain has a large international appeal, the Bellevue location marks only the second US location, with the only other in the Los Angeles. The restaurant fills a 7,000 square feet space and seats 220 customers.
The restaurant opened Sunday and had wait times that were estimated at almost 2 hours when they opened, eventually calming down to accommodate walk-ins by the late afternoon.

I tried to go tonight but the wait for 2 peeps was three hours. I’ll check it out later.
Nice thing about living here – pop in and get a number, go back home and have the restaurant call you two hours later to tell you the table is ready. Made the 3 hour wait quite painless. This is still a work in progress but I’m really happy it’s open.
So I went here for lunch today and here were my observations…
Go early or be prepared to wait in line for 60-90 minutes. I was there at 11:07 and the line went to the elevators.
The pork bao is decent. Not the best I’ve ever had, but not the worst. The spicy beef noodle soup should have been called the “in no way is this spicy beef noodle soup spicy”. There was a piece of meat in there that was tougher than my shoe. The rest of the meat was fine. Just that first piece was off-putting. The table-side chili sauce and vinegar helped the soup tremendously.
Granted, this is still the first week that they’re open, and the kitchen needs to get into its groove. Our server was pleasant but missed an item in our order, then proceeded to give us the wrong item. She also didn’t come by to fill water glasses at all. Again. First week jitters. Going to cut them a break. The shumai was fine but again, nothing truly spectacular. Overall, I give Din Tai Fung 2.5 of 5 stars.
So the main draw here is unhealthy dumplings? I hope they can make it in that location but expensive Chinese food for many of us is just not a draw.
