The Baja Fresh Mexican Grill in Downtown Bellevue was unexpectedly closed a few weeks ago. The doors have a ‘For Rent’ sign on the outside. It is unknown if the Baja Fresh Franchise will stay intact with a new owner, or if this space will get entirely replaced with a new business.
As far as I know the Overlake Baja Fresh is still open. I haven’t been to the downtown one since the health inspectors closed them down a few months back, I can’t imagine that was good for business though.
I won’t miss this, how about a bagel / sandwich place?

How about a p0rno shop? I’d visit.
How about a roasted chicken place, like Boston Chicken, Pollo Loco, Pollo Campero, etc. There wouldn’t be much competition, especially with KFC gone.
@Jonka: oooh! Boston Chicken would be awesome! I don’t crave that often, but when I do, I can’t think of anything in Bellevue that would be a decent replacement.
I think a healthy sandwich shop would rock! We have to go to QFC or Safeway for a good fresh sandwhich now.
I agree Matt. I would love to see a great sandwich shop go in here. Bellevue has a lack of sandwich options.
Fish N Chips!
There is Jimmy Johns a block over… There are sub shops…Quiznos across the street.. another sandwich shop? Plus you can get a sandwich at any restaurant.. that is why I mentioned Fish N Chips.. wouldn’t that be great? Something different?

It would be nice to see something local go in the space rather than a national chain. Maybe I will open my rib joint, “Ooh Baby!” Any investors??? = )

Everyone will be excited when the new concept opens in the old Baja Fresh space. It’s none of the above concepts, but it is different from anything else we have in Bellevue or in Seattle. More to follow…..
