Hello Robin Bellevue

Hello Robin, a bakery known for its specialty cookies, has announced plans to open a new location in Bellevue. This will be the bakery’s first Eastside location, expanding from its existing stores in Capitol Hill and University Village.

The Bellevue store will feature popular cookie flavors including classic chocolate chip, birthday cake, flourless chocolate, and s’more, alongside vegan and dairy-free options, as well as seasonal flavors. It is slated to open in November 2024.

The new shop is located at the former Molly Moon’s walk-up shop at 10045 Northeast 1st Street, a 200-square-foot space directly across from Bellevue Downtown Park.

Hello Robin was founded in 2013 after Robin Wehl Martin received a text from Zack Moon, which led to a partnership and the establishment of the bakery. Robin, known for her high-quality baked goods, gained attention with cookies made from eggs provided by Molly and Zack’s chickens.

The bakery opened its first store in Capitol Hill in late 2013, followed by a second location in University Village in 2020. The business has also expanded to offer frozen bake-at-home cookie dough at local markets.
