Chay Concept is set to open in December at 10606 NE 2nd Street, according to the manager of the restaurant. It will be located at Soma Towers South in Bellevue. This eatery will cater to plant-based food enthusiasts by offering a vegetarian and vegan menu inspired by traditional Vietnamese cuisine, presented with a modern twist.
The menu will feature a variety of dishes, including the fragrant Phở Roll and the indulgent Steamed Lotus Purple Rice. Each dish is crafted with care to highlight the bold flavors and fresh ingredients that are characteristic of Vietnamese cooking. Chay Concept aims to showcase the artistry and creativity inherent in this cuisine while providing options for those following vegetarian and vegan diets.
In addition to its culinary offerings, Chay Concept will also offer a curated beverage program. This will include an array of low-alcoholic, fruit-based cocktails, as well as a selection of premium wines and bottled craft beers sourced from local breweries.
The name “Chay” translates to “vegetarian” in Vietnamese, reflecting the restaurant’s commitment to plant-based dishes.
Chay Concept will be taking over the space that was previously occupied by FogRose Atelier, which reopened in 2019 with a refreshed look designed to be both inspiring and comforting. FogRose Atelier was known for its desserts, cocktails, and dinner offerings, creating a unique dining atmosphere.
While Chay Concept will be a singular location, the owners also run a vegetarian bistro in Renton called Blossom. This existing establishment has garnered attention for its plant-based menu, which aligns with the vision of the Chay Concept.
