
Chay Concept, a new vegetarian restaurant, has opened at Soma Towers in downtown Bellevue. Located at 10606 Northeast 2nd Street, the restaurant is currently serving both lunch and dinner.
Chay Concept offers traditional vegetarian food with a modern approach. The lunch menu includes dishes such as Pho Rolls, salted egg tofu, mango salad, sesame imitation beef with lotus root, veggie curry, Chay vermicelli noodle, and egg noodle soup. The dinner menu expands on these offerings with pumpkin and lotus seed soup, Banh Mi skillet, ginger fried fish, pumpkin fried rice, and crispy vegetables.
The beverage menu features handcrafted cocktails, coconut juice, Thai iced tea, dripping coffee, and traditional loose-leaf tea. For dessert, guests can choose from mango sticky rice, flan, sesame ice cream and more.
Chay Concept caters to plant-based food enthusiasts by offering a vegetarian and vegan menu inspired by Vietnamese cuisine. The restaurant incorporates imitation meat in some of its dishes.
Chay Concept occupies the space previously held by FogRose Atelier, which was known for its desserts, cocktails, and dinner offerings before its closure. While this is the only location for Chay Concept, the owners also operate Blossom, a vegetarian bistro in Renton.
The restaurant was founded by Chef Van Nguyen, who aims to introduce Bellevue to the diverse flavors of Vietnamese plant-based cuisine. Chay Concept seeks to highlight fresh ingredients, aromatic herbs, and a balance of flavors while promoting healthy and sustainable eating.
Reservations can be made through the restaurant’s website. Operating hours are from 11 a.m. to 3 p.m. for lunch and 4 p.m. to 9 p.m. for dinner.
