Midnight Cookie Co. at Lincoln Square

Midnight Cookie Co. has announced the closure of its Bellevue location at Lincoln Square’s Lincoln South Food Hall, according to a statement posted on the company’s Instagram page. The store’s final day of operation in Bellevue was January 12.

The Bellevue location opened on April 26, 2024, inside Lincoln Square. Before that, Midnight Cookie Co. operated its first Bellevue store in 2023 on the third level of Bellevue Square, marking the brand’s initial entry into the Bellevue market.

In its announcement, the company reflected on its time in Bellevue, writing, “After so many late nights, sweet cookies, and amazing memories, Midnight Cookie Co. is saying goodbye to our Lincoln Square location. Today, January 12, is our last day of business in Bellevue.”

The company stated that while it is closing the Bellevue location, it will continue to serve customers at its other Eastside stores, including locations at Redmond Town Center and Juanita Beach in Kirkland.

Midnight Cookie Co. was purchased in March 2020 by Paul Quinn and Manish Gaudi from its original founders. Under new ownership, the company opened its first mall location at Everett Mall in September 2021, followed by a second mall store at Pacific Place Mall in February 2022.

The owners have said these experiences confirmed their belief that the brand performs well in high-traffic mall environments, leading to continued expansion with a focus on both walk-up and delivery service.

The company closed its announcement by thanking customers for their support, saying, “Thank you for the love, the late-night cravings, and all the moments you shared with us here.”
