Paris Baguette in Downtown Bellevue.
The Korean bakery-café giant landed at the base of Salesforce Tower on 108th in the winter of 2025-26 — a pastry case, whole cakes to order, and the newest reason to walk a block off the Collection.
Paris Baguette is the bakery-café that finally gave the office side of downtown a proper pastry case. It opened on the retail level of Salesforce Tower on 108th Avenue NE, in the corner Sam’s Tavern held, with a long counter of croissants, cream donuts, milk buns, and sponge cakes, Lavazza espresso, and the boxed-cake counter that has made the chain a birthday default across its markets. It is a walk-a-block-off-the-Collection kind of place, and it is busy from the first hour.
DBN reported the plan in October 2025 and the opening in January 2026 — Bellevue’s first Paris Baguette after Redmond, Tukwila, and Lynnwood, and one of thousands the Seoul-based SPC Group runs worldwide. The room came in as the office towers on 108th were filling back up, and its weekday morning line is the proof.
It is a chain bakery, and a very good one at what it does; for the independent coffee counters nearby see our guide to downtown Bellevue coffee shops.
What to Get at Paris Baguette
The case runs to dozens of pastries, donuts, breads, and cakes; these five are where a first visit starts.
Strawberry Croissant
A croissant split and filled with custard cream and fresh strawberries, dusted with powdered sugar — the case’s photo-first pastry, and the one to try first.
King Cream Donut
A soft donut filled with custard cream and rolled in powdered sugar. The single item Paris Baguette regulars come back for.
Croissant Donut
Flaky croissant layers, fried, filled with custard, and topped with lemon icing — the chain’s take on the cronut idea.
Korean Iced Milk Coffee
Sweet, milky, and cold, made with Lavazza espresso — the drink to carry out with a box of pastries.
Strawberry Soft Cream Cake
Vanilla sponge, soft whipped cream, and fresh strawberries, serving about ten; whole cakes need a day’s notice. The reason half the line is picking up a box.

Make It a Morning
The east side of downtown makes an easy morning: pair the pastry with a walk through The Bravern two blocks east, downtown’s coffee shops if you want an independent roaster instead, or HEYTEA at The Bravern for the afternoon version.
