According to City of Bellevue records, Hummus Republic, a Mediterranean restaurant, is planning to open in Downtown Bellevue. The address is 11022 Northeast 8th Street.
The menu offers items like build your own meals by choosing either a wrap, pita, or bowl. Customers choose their base, like couscous or warm garbanzo beans, then decide on hummus and bread like roasted eggplant hummus or tzatziki, pick a protein, like chicken shawarma or Moroccan steak, and lastly, choose from unlimited toppings and dressings. There are also sides available like sweet potato fries, falafel, and pita chips.
Beverages range from original and apple raspberry lemonade, to a tahini shake and bai Madagascar coconut mango.
The fast-casual food franchise specializes in healthy, fresh and fast menu items that are customizable. The customizable items include bowls, baguettes, and pitas.
Hummus Republic started in 2013 by a group of friends that wanted to bring their families’ authentic Mediterranean cuisine to customers on the go. In 2015, they partnered with Global Impact Ventures to expand their business.
The restaurant is currently under construction. This is the first Hummus Republic franchise to open in Washington.
