Mediterranean Café Sabine to Open in Bellevue Mid-July

Sabine Café and Bar is preparing to open its second location in Downtown Bellevue, with a representative for the restaurant confirming a target opening of mid-July.

The Mediterranean and Middle Eastern–inspired café will operate inside The Eight, a 25-story office tower at 10666 NE 8th St. The restaurant occupies roughly 3,000 square feet on the building’s ground floor and seats about 50 guests indoors, with additional outdoor seating on the plaza, private dining areas, and lobby seating set aside for grab-and-go visitors.

The independent café and bar got its start in Seattle’s Ballard neighborhood in 2020. The restaurant will run as an all-day café, bakery, and bar, serving breakfast, lunch, and dinner alongside espresso and a lineup of colorful cocktails.

The menu was developed by executive chef and operating partner Jacob Dunkelberger. Its dishes draw on Mediterranean and Middle Eastern influences and lean on seasonal ingredients sourced from Pacific Northwest farms, foragers, and producers.

A dedicated grab-and-go program is also planned to serve office workers at The Eight who are looking for a quick option during the workday.

“We’ve been so pleased by the reception of Sabine in Ballard and are thrilled by the opportunity to introduce the restaurant to the Eastside,” said Kathryn Meyer, general manager and operating partner.

Ahead of the opening, Sabine has been building out its Bellevue team. The restaurant recently shared on social media that it is hiring for the new location, with openings posted for a baker, line cook, barista, bartender, and food runner.
