New Food & Beverage Concepts to Open at Bellevue’s Food Hall Sept 20

Conscious Hospitality Group will expand its portfolio with three new concepts at Lincoln Square South in The Bellevue Collection. Set to open on September 20, 2024, the new additions are Club Seltzer, KODE, and EatDirt.

The arrival promises a variety of options, inviting everyone to immerse themselves in CHG’s purpose-driven mission. Choose a concept that suits your taste buds or fulfills your desires for the day and embark on a culinary journey with us.”

Club Seltzer will be the region’s first nonprofit seltzer bar, focusing on non-alcoholic and adaptogen-enhanced beverages. All profits from Club Seltzer will go to organizations dedicated to climate restoration and environmental integrity. The bar aims to provide a refreshing experience with drinks made from pure, natural ingredients and infused with fresh fruits.

KODE will offer a unique twist on Detroit-style pizza by incorporating Korean-inspired flavors. The pizzas feature a thick, airy crust baked in blue steel pans, resulting in crispy edges and a chewy center. The menu includes bold Korean-inspired sauces like spicy gochujang and savory bulgogi, along with toppings such as marinated spicy chicken, fresh kimchi, and crispy seaweed. The design of KODE combines Midwestern elements with Asian street food influences, highlighted by a neon red glow.

EatDirt will introduce its first brick-and-mortar location, bringing its fresh produce delivery service to a physical space. The menu will include salads, sandwiches, juice, and a bone broth bar. In partnership with Charlie’s Produce and local farmers, EatDirt aims to provide the freshest produce and simplify healthy, vegetable-forward eating. The design features hanging vegetables arranged to spell “EatDirt” from a specific angle.

Zac Levine designed the space, incorporating a retro-futuristic aesthetic with elements of nostalgia and modernity.

Jennifer Leavitt, Vice President of Marketing for The Bellevue Collection, noted, “Given CHG’s ties to the Pacific Northwest and our focus on amplifying a local offering, we knew this partnership would be perfect for the Food Hall and the audience it serves – and I cannot wait to try Korean-inspired flavors on Detroit-style pizza!”

Founded by Daniel Brawer and Norman Wu, Conscious Hospitality Group is known for developing and launching food concepts across the Pacific Northwest, with plans for significant expansion. Brawer concluded, “We’re just getting started with adding these concepts to our portfolio, showcasing our capabilities to grow any kind of concept if it’s the right fit for our ethos. You can expect several more—even as early as next year.”

Conscious Hospitality Group is also expanding with another eatery in Downtown Bellevue with the launch of Sano Cafe, a fast-casual restaurant dedicated to using wholesome ingredients. The new location is at Amazon-leased Centre 425. This will be the company’s second Sano Cafe, following the successful opening of the first location in 2017 by founder Lisa Nordstrom.
