What the Pho is now open on the first level of Bellevue Square. It is located next to GNC and across from Gap.

The quick-service restaurant offers traditional Vietnamese street food. Vietnamese Pho noodle soup, Bahn mi sandwiches, and a selection of meats and tofu are included on the menu.

What the Pho was originally located on Northeast 8th Street and 108th Avenue Northeast in the Costain Building. A 26-story office building is being constructed by Skanska, which will also be inclusive of ground floor retail and underground parking.

In November 2019, the eatery moved from their Northeast 8th location into Lincoln South Food Hall. It joined other quick-serve concepts like a burger joint, poke restaurant, and bar.

Ascend Hospitality Group confirmed that ownership of Lincoln South Food Hall had been turned over to Kemper Development Company. The multi-concept area at Lincoln Square has since been closed to refresh the concept. When the concepts were closed, Kemper Development Company confirmed that What the Pho would be moving to Bellevue Square.
