Salt & Straw will open a new scoop shop in Bellevue on Friday, April 24, located at 10415 NE 4th Street.
The Portland-based ice cream company, founded in 2011 by cousins Kim Malek and Tyler Malek, has expanded its presence across Washington in recent years. The Bellevue location will mark its eighth shop in the state, following a 2025 opening in Pike Place Market. The company maintains partnerships with regional producers, including Beecher’s Handmade Cheese and Pike Place Fish Market.
Ahead of the opening, Salt & Straw is collaborating with Ascend Prime Steak & Sushi on a limited-time dessert. The dish, called the Miryoku, was created by chef Brandon Muehl and will be available beginning April 17 through the end of the month. It features Salt & Straw’s Snap N’ Crackle ice cream along with candy cap meringue, huckleberry gastrique, and basil sponge.
Opening weekend will include several promotions. On April 24, the first 100 guests will receive gift cards in varying amounts, ranging from items such as an ice cream flight to a year’s supply of ice cream. The Bellevue shop will also debut Salt & Straw’s May Flower Series one week ahead of its national release.
On Saturday, April 25, customers who purchase a single scoop will receive a complimentary kids scoop and a themed coloring page. On Sunday, April 26, Bellden Cafe will host a pop-up affogato bar inside the shop from 11 a.m. to 1 p.m., offering coffee paired with Salt & Straw ice cream.
Salt & Straw began as a small, family-run business in Portland and has grown into a national brand known for its rotating menu of seasonal flavors and focus on local ingredients.
