Evergreens is now open, located on Northeast 4th street in downtown Bellevue. This Seattle-based, fast-casual restaurant chain has one other location in Bellevue at Bellevue City Center Plaza.

Using only fresh ingredients and house-made dressings, Evergreens offers already made and create-your-own salads, as well as wraps and warm grain bowls. Customers can choose their base (salad or grain bowl), toppings (veggies, cheeses, fruits, etc.), proteins, and lastly, dressings and finishings. Salads start at $9.

Launched by two Bellevue natives, Todd Fishman and Hunter Brooks, the list of Evergreens locations is growing quickly. There are currently 11 other locations open throughout Seattle and the Eastside. Plans of other locations that are set to open soon include; Sammamish, downtown Kirkland, Columbia Center, SeaTac Airport and 2nd & Pike.

Evergreens is situated next to Chipotle. The location was previously Jamba Juice, which closed in early 2018.
