Sabine Cafe & Bar is set to open in downtown Bellevue at The Eight, an office tower located at 1066 Northeast 8th Street. This will be the second location for the Mediterranean-inspired restaurant, which also has an existing location in Ballard. The Bellevue location marks Sabine Cafe’s first expansion to the Eastside.
Sabine’s menu offers a variety of options, including espresso drinks, cocktails, pastries, as well as breakfast and lunch items. The dishes draw upon Mediterranean influences with Middle Eastern spices and herbs, while the restaurant emphasizes the use of local, in-season, and organic ingredients that highlight the Pacific Northwest’s offerings.
The eatery was founded after the owners decided to close their previous establishment, Bastille Cafe & Bar, following the pandemic in 2020. With a renewed vision and a focus on community and espresso, they opened Sabine.
The opening of the restaurant is scheduled for December 2026, according to an employee at the restaurant. Their PR firm stated that the lease has not yet been officially signed.
The Eight is a 25-story office tower with approximately 540,000 square feet of commercial space, 374,046 square feet of which are designated for Pokémon’s operations. In October 2024, Pokemon submitted plans to the city under the project name of “Tetris”, featuring a small museum, dining, and amenities.
