Mediterranean Restaurant Sabine Café Coming to Bellevue Early 2026

Sabine Café, an all-day Mediterranean-inspired restaurant, is set to open a new location in early 2026 at The Eight, a 25-story office tower in Downtown Bellevue. This marks Sabine Café’s second location and its first expansion to the Eastside, according to Yes Parade Restaurant Group, the Seattle-based hospitality group behind the restaurant.

Sabine Café originally opened in Seattle’s Ballard neighborhood in 2020 and quickly became a community favorite. Known for its brunch, craft espresso fueled by Caffe Vita, house-made pastries, and Mediterranean-inspired dinner and cocktail menus, the restaurant has built a strong reputation.

The Bellevue location will maintain Sabine’s signature all-day café, bar, and bakery concept while introducing an expanded grab-and-go menu tailored for The Eight’s office clientele.

“We’ve been so pleased by the reception of Sabine in Ballard and are thrilled by the opportunity to introduce the restaurant to the Eastside,” said Kathryn Meyer, Sabine’s general manager and operating partner. “Every element is a labor of love, from the coffee and wine programs to the baking and fresh, seasonal menu curated by Chef Jacob. We can’t wait to introduce ourselves to Bellevue.”

The restaurant’s menu is crafted by executive chef and operating partner Jacob Dunkelberger, drawing inspiration from Mediterranean and Middle Eastern flavors with a modern twist. The dishes heavily emphasize seasonality and sustainability, featuring locally sourced ingredients from farms, foragers, and producers in the Pacific Northwest.

The 3,000-square-foot Bellevue location will be situated on the ground floor of The Eight at 10666 NE 8th St., offering 50 indoor seats, private dining spaces, and an outdoor plaza dining area for warmer months. Additionally, guests can take advantage of The Eight’s lobby seating for grab-and-go meals.

Yes Parade Restaurant Group operates several other restaurants in the Puget Sound region, including Rhein Haus, Poquitos, Macleod’s Scottish Pub, Stadium Golf, Wally’s Wisconsin Tavern, and Stoneburner. Sabine Café Bellevue’s interiors are being designed by Yes Parade co-founders James Weimann and Deming Maclise, with materials sourced from their international travels. The project is being developed in partnership with Mallet Design Build and Skanska, the developer of The Eight.

The Eight includes approximately 540,000 square feet of commercial space, with 374,046 square feet leased to Pokémon for their operations. In October 2024, Pokémon submitted plans to the city under the project name “Tetris,” outlining a small museum, dining options, and other amenities within the building.
