Hello Robin Cookie Shop Opening Across from Bellevue Park May 7

Popular Seattle-based cookie shop Hello Robin is set to open its highly anticipated downtown Bellevue location on May 7. The new store is located at 10045 Northeast 1st Street, directly across from Bellevue Downtown Park. At just 200 square feet, the space previously housed Molly Moon’s walk-up ice cream shop.

Hello Robin first announced its Bellevue expansion in September 2024. In a recent Instagram post, the company shared additional details about what customers can expect at the new location:

  • Ten cookie flavors will be available at all times. Due to the shop’s smaller footprint, some flavors offered at other locations will not be available in Bellevue.
  • Ice cream will not be served at this store, with the brand choosing to focus solely on cookies. For those seeking ice cream pairings, Molly Moon’s remains just down the street.

“We can’t wait for you all to see this gem we’ve been working on,” the post read. “We are so excited to start baking for you, Bellevue!”

As part of the launch, Hello Robin is also inviting fans to help name the new location. A recent social media post encourages followers to suggest playful names for the Bellevue store, described as “the Hello Robin you know and love, just fun-sized.” The winner will receive a $100 Hello Robin gift card.

The cookie shop debuted in Capitol Hill in 2013 and opened a second location at University Village in 2020. In addition to its brick-and-mortar shops, the bakery also sells frozen, bake-at-home cookie dough at local markets.
