
Indigo Cow and Machi Machi are scheduled to open a shared location at Main Street Flats on Bellevue’s Main Street. The opening will mark a new Bellevue location for Indigo Cow and the first Bellevue location for Machi Machi.
Indigo Cow previously operated on Bellevue Way. That location has closed, and the Main Street Flats space will serve as the brand’s new Bellevue location. Indigo Cow is a Japanese soft serve ice cream brand with locations in Asia, North America, Europe, and Oceania. In the United States, the company currently operates another location in New York.
Indigo Cow specializes in Japanese-style soft serve ice cream. Menu offerings include Hokkaido milk soft serve, rotating seasonal flavors, and a swirl option combining milk and seasonal flavors. Ice cream will be available in cups or waffle cones.
Toppings include house-made fruit sauces, which vary by season, Theo dark chocolate, and shiratama mochi with kuromitsu syrup and kinako. Available toppings may vary.
Machi Machi is a bubble tea chain that originated in Taiwan. Founded in 2018, the brand has expanded internationally, with locations across Asia, North America, Europe, and Oceania. Its locations include the United States, Canada, Singapore, Japan, and New Zealand.
Machi Machi offers a range of bubble tea beverages, including milk teas and other tea-based drinks, with multiple flavor options and preparation styles.
Also planned to open at Main Street Flats is Arctic Elevation, a wellness center offering services that include IV drip therapy, cryotherapy, red light therapy, infrared sauna sessions, compression therapy, cold plunge experiences, hyperbaric oxygen therapy, Hydrafacial treatments, Botox services, NAD+ therapy, weight loss programs, and fitness-related services.
Opening dates for the businesses have not yet been announced.
