Sabine Café is targeting a late June or early July opening for its new Bellevue location, according to a company representative, as construction on the space continues.

The restaurant will open inside The Eight, a 25-story office tower located at 10666 NE 8th St. in Downtown Bellevue. The project marks the second location for Sabine Café and its first expansion to the Eastside.

Sabine Café first opened in Seattle’s Ballard neighborhood in 2020, where it quickly became known for its all-day service featuring brunch, craft espresso made with Caffe Vita, house-made pastries, and Mediterranean-inspired dinner and cocktail menus.

The Bellevue location will operate as an all-day café, bar, and bakery, with a menu created by executive chef and operating partner Jacob Dunkelberger.

The offerings draw from Mediterranean and Middle Eastern influences and emphasize seasonal ingredients sourced from Pacific Northwest farms, foragers, and producers. A strong grab-and-go program will also be available for office workers at The Eight.

The 3,000-square-foot restaurant will occupy the ground floor of the tower and include 50 indoor seats, outdoor plaza seating, private dining spaces, and additional lobby seating for grab-and-go guests.

“We’ve been so pleased by the reception of Sabine in Ballard and are thrilled by the opportunity to introduce the restaurant to the Eastside,” said Kathryn Meyer, general manager and operating partner.

Interior design for Sabine Café Bellevue is being led by Yes Parade co-founders James Weimann and Deming Maclise, incorporating Mediterranean influences and materials sourced from the team’s international travels.
