A Sichuan-style restaurant is planned to open at Vulcan Real Estate’s West Main project that is leased by Amazon. Shoo Loong Kan is a famous hot pot eatery from China.

Shoo Loong Kạn is internationally recognized as a brand of excellence in Sichuan-style hot pot cuisine. The eatery prioritizes authenticity in every dish and a unique dining experience. The ingredients are locally sources, and traditional Chinese cooking techniques are at the heart of each dish.
The Bellevue Shoo Loong Kan is the first of its kind to open on the West Coast. According to the press release, it will serve as a future flagship location. The company has been expanding in the United States, with several new leases this past year.
The restaurant will reflect the diverse customer base in Bellevue, incorporating a blend of traditional charm and futuristic design. Inside the 5,000 square foot venue, patrons will encounter a 3D-printed dragon wall, paying homage to Shoo Loong Kan’s iconic emblem.
The hot pot restaurant is planned to open towards the end of 2024.
Bellevue’s growing tech scene and diverse culinary offerings have made it desirable for Shoo Loong Kan’s first West Coast establishment. “We hope with a stable foundation established in Bellevue, we can bring our cuisine to the community and beyond,” said Mo Liang, Senior Vice President at Venturant Group. The combination of the restaurantʼs Western hot pot and innovative design and technology is expected fit in with its neighboring restaurants and offices.
Also opening at Vulcan’s West Main tower is renowned Peruvian eatery, La Mar. Slated to open in summer 2024, the restaurant will be 10,000 square feet with both indoor and outdoor seating. La Mar will have a seafood display and Peruvian artwork from local artists.
